I need to monitor the power consumption and heating output (to a hot water cylinder).

    Any pointers would be welcome.

    Thanks

You could do this with some cheap iButtons, they are about a tenner each. Set them to monitor every minute and download the data every day for a week and you should get a good idea of temperature differences and when pumps etc are working.

Measuring the input power can be done easily. To measure the heat output you need to record the temperature rise and volume of water passing through the system. To do it accurately you may need to multiply the instantaneous temperature by the instantaneous flow rate. eg rather than assume you can multiply average temperature by average flow rate. Flow meters with pulsed outputs for data logging should be available for £60 ish. Try ebay?
