I'd like to be able to monitor electricity, gas use, water use, CO2 levels, temperature and moisture levels. And I'd like to be able to follow all this data intelligently/graphically on an attractive easy-to-use app on an iPad/iPhone, so we can understand how our building works and adjust any behaviour appropriately.

Does this exist? How do we go about it? Are there any companies specialising in sensors/meters/connectors/software for this kind of thing?

    Start by looking here:

I have my own favourites, but may not be what you are after. It is really finding the sensors, the rest is just wiring and programming (not my area at all).

You might want to look at home automation forums as this community has similar requirements but for potentially different reasons. For example I participate in the following http://www.automatedhome.co.uk/vbulletin/forum.php

Do any of you have your own internal gas meter for monitoring purposes?

No, but I'm thinking about it. The main gas meter has no pulse output so more difficult to connect to my HA system. To use the main meter I need to construct either an optical sensing unit to detect the silver element on the last dial or see if a hall effect sensor could be used (detecting the magnetic properties of the same silver disk on the last dial). If neither of these work then the only option is a secondary meter.
